Ingredients:
2 salmon fillets (approximately 6 ounces each)
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
2 cups mixed greens (spinach, arugula)
1 cup cherry tomatoes, halved
1 medium cucumber, diced
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled
1 tablespoon red wine vinegar
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

Instructions:

1. Preheat your grill or grill pan over medium-high heat.
2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Brush the mixture over the salmon fillets.
3. Place the salmon on the grill and cook for about 4 to 5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and let it rest.
4. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
5. Drizzle the red wine vinegar over the salad and toss to mix evenly.
6. Divide the salad between two plates. Top each salad with crumbled feta cheese.
7. Slice the grilled salmon into bite-sized pieces and place on top of the salads.
8. Sprinkle fresh oregano over the salads for garnish.
