4 large bell peppers (any color)
1 cup fresh spinach, chopped
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Fresh basil leaves for garnish (optional)

Steps

1. Preheat the oven to 375 degrees Fahrenheit.
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut side up in a baking dish.
3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
4. Add chopped spinach to the skillet and cook until wilted, approximately 3 to 4 minutes. Remove from heat and let cool slightly.
5. In a large mixing bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, cooked spinach, dried oregano, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
6. Spoon the spinach and ricotta mixture into each bell pepper, filling them generously.
7. Place the stuffed peppers in the preheated oven and bake for 25 minutes, or until the peppers are tender and the cheese is lightly golden on top.
8. Once done, remove from the oven and let cool for a few minutes.
9. Garnish with fresh basil leaves if desired before serving.
