Ingredients:
– 4 lamb chops
– 2 medium zucchinis, sliced into rounds
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 1 cup plain Greek yogurt (unsweetened)
– 2 tablespoons fresh mint, chopped
– 1 tablespoon lemon juice

Instructions:

1. Begin by preheating the grill to medium-high heat.

2. In a small bowl, combine the olive oil, garlic powder, oregano, salt, and pepper. Mix well to create a marinade.

3. Brush the marinade over the lamb chops, ensuring they are evenly coated. Set them aside to let the flavors meld for a few minutes.

4. While the lamb chops are marinating, prepare the zucchini. Toss the zucchini rounds in a little olive oil, sprinkle with salt and pepper, and set aside.

5. Place the marinated lamb chops on the grill and cook for about 4-5 minutes on each side, depending on the thickness, for medium-rare doneness.

6. In the last few minutes of grilling, add the zucchini rounds to the grill. Cook them for about 2-3 minutes on each side until they are tender and have nice grill marks.

7. While the lamb and zucchini are grilling, make the mint yogurt. In a bowl, combine the Greek yogurt, chopped mint, lemon juice, and a pinch of salt. Stir until well mixed.

8. Once cooked, remove the lamb chops and zucchini from the grill. Let the lamb rest for a couple of minutes before serving.

9. Plate the grilled lamb chops alongside the zucchini. Serve with a generous dollop of the mint yogurt on the side.
