Baked Salmon with Cauliflower Mash and Green Beans

Ingredients
2 salmon fillets (6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 small head of cauliflower, cut into florets
2 tablespoons unsalted butter
1/4 cup unsweetened almond milk
1 teaspoon onion powder
1 pound green beans, trimmed
1 lemon, sliced
Instructions
Preheat the oven to 400 degrees Fahrenheit.
Line a baking sheet with parchment paper. Place the salmon fillets on the sheet and drizzle olive oil over the top. Sprinkle garlic powder, paprika, salt, and pepper evenly on the fillets.
Arrange the lemon slices on top of the salmon. Bake in the preheated oven for about 15 to 20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
While the salmon is baking, steam the cauliflower florets in a pot with a small amount of water until tender, about 8 to 10 minutes. Drain well.
In a mixing bowl, combine the steamed cauliflower, unsalted butter, unsweetened almond milk, onion powder, and a pinch of salt and pepper. Use an immersion blender or a regular blender to blend until smooth and creamy.
In a separate pot, bring water to boil. Add the green beans and cook for about 4 to 5 minutes, until just tender but still crisp. Drain the green beans and season with a drizzle of olive oil, salt, and pepper.
To serve, place a scoop of cauliflower mash on each plate, add a salmon fillet, and arrange green beans on the side. Enjoy your healthy, low-carb dinner!
