Baked Tilapia with Lemon and Garlic Zucchini

Ingredients
Two tilapia fillets
Two medium zucchinis
Two tablespoons olive oil
Juice of one lemon
Three cloves of garlic, minced
Salt to taste
Pepper to taste
One teaspoon dried oregano
One teaspoon chopped fresh parsley for garnish
Instructions
Preheat the oven to 400 degrees Fahrenheit.
Trim the ends of the zucchinis and slice them into thin rounds.
In a large bowl, combine the zucchini slices with one tablespoon of olive oil, minced garlic, salt, pepper, and dried oregano. Toss until the zucchini is well coated.
Arrange the seasoned zucchini evenly in a baking dish.
Drizzle the tilapia fillets with the remaining tablespoon of olive oil, lemon juice, salt, and pepper. Place the fillets on top of the zucchini in the baking dish.
Bake in the preheated oven for approximately 20 minutes, or until the tilapia flakes easily with a fork and the zucchini is tender.
Once cooked, remove from the oven and garnish with fresh parsley for added flavor and presentation.
