Cauliflower and Broccoli Stir-Fry with Turkey

Ingredients:
1 cup cauliflower florets
1 cup broccoli florets
8 ounces ground turkey
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon soy sauce (low sodium)
1 teaspoon ginger, grated
Salt and pepper to taste
Green onions, chopped for garnish
Instructions:
Begin by heating olive oil in a large skillet over medium heat.
Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute, until fragrant.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 5 to 7 minutes, or until the turkey is browned and cooked through.
While the turkey is cooking, prepare the cauliflower and broccoli florets. After the turkey has cooked, add the cauliflower and broccoli to the skillet.
Stir-fry the vegetables with the turkey for about 5 to 7 minutes, or until the broccoli is bright green and tender-crisp.
Drizzle the soy sauce over the mixture, stirring well to combine. Season with salt and pepper to taste.
Remove from heat and transfer to a serving dish. Garnish with chopped green onions before serving.
