Grilled Chicken and Tomato Salad

Ingredients:
– 2 skinless, boneless chicken breasts
– 2 cups cherry tomatoes, halved
– 1 cup mixed greens (such as spinach and arugula)
– 1/4 cup fresh basil, chopped
– 2 tablespoons olive oil
– 1 tablespoon balsamic vinegar
– 1 teaspoon garlic powder
– Salt and pepper to taste
Instructions:
1. Preheat a grill or grill pan over medium-high heat.
2. Season the chicken breasts with garlic powder, salt, and pepper.
3. Place the chicken on the grill and cook for about 5 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let it rest for a few minutes.
4. While the chicken is resting, prepare the salad. In a large mixing bowl, combine the cherry tomatoes, mixed greens, and chopped basil.
5. In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle the dressing over the salad and toss gently to combine.
6. Slice the grilled chicken and arrange it on top of the salad.
