Cauliflower and Zucchini Bake with Cheese

Ingredients
1 medium head of cauliflower, chopped into small florets
2 medium zucchinis, sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and black pepper to taste
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 375 degrees Fahrenheit.
In a large mixing bowl, combine the chopped cauliflower florets and sliced zucchinis. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and black pepper. Toss until the vegetables are well coated.
Transfer the vegetable mixture to a greased baking dish, spreading it out evenly.
In a separate bowl, mix the shredded mozzarella and grated Parmesan cheese together. Sprinkle half of this cheese mixture over the vegetables in the baking dish.
Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.
After 25 minutes, remove the foil and stir the vegetables gently. Sprinkle the remaining cheese mixture on top. Return the dish to the oven, uncovered, for an additional 5 to 10 minutes, or until the cheese is melted and golden brown.
Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
