Ingredients
For the crepes:
1 cup almond flour
2 large eggs
1/2 cup unsweetened almond milk
1 teaspoon vanilla extract
Pinch of salt
Cooking spray or a small amount of butter for frying

For the berry compote:
1/2 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)
1 tablespoon water
1 teaspoon lemon juice
1/2 teaspoon stevia or erythritol (optional, for sweetness)

Instructions
1. In a mixing bowl, combine almond flour, eggs, almond milk, vanilla extract, and a pinch of salt. Whisk the ingredients together until smooth and well combined. Let the batter sit for a few minutes to thicken slightly.

2. While the batter rests, prepare the berry compote. In a small saucepan over medium heat, add mixed berries, water, lemon juice, and optional sweetener. Stir occasionally and cook until the berries break down and release their juices, about 5 minutes. Remove from heat and set aside.

3. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with cooking spray or a small amount of butter.

4. Pour about 1/4 cup of the crepe batter into the hot pan, tilting and swirling to spread the batter evenly into a thin layer. Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly golden.

5. Carefully flip the crepe using a spatula and cook for another 1-2 minutes on the other side. Remove from the pan and keep warm. Repeat with the remaining batter to make a total of two crepes.

6. To serve, place the crepes on a plate and spoon the warm berry compote on top.
