Baked Avocado Eggs
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 2
Ingredients
2 ripe avocados
4 large eggs
Salt to taste
Pepper to taste
Fresh chives or parsley for garnish
Optional: hot sauce for serving
Steps
1. Preheat your oven to 425°F (220°C).
2. Cut the avocados in half and remove the pit. Scoop out a little more flesh from the center to create enough room for the egg.
3. Place the avocado halves in a small baking dish, cut side up, ensuring they are stable. If needed, use crumpled aluminum foil to support them.
4. Crack an egg into each avocado half, being careful not to break the yolk. If there’s too much egg, you can discard a little to fit.
5. Season with salt and pepper to taste.
6. Place the dish in the preheated oven and bake for 12 to 15 minutes, or until the egg whites are set but the yolk remains runny or to your desired doneness.
7. Remove from the oven and sprinkle with fresh herbs. If desired, add a dash of hot sauce before serving.
