Baked Chicken Thighs with Brussels Sprouts

Ingredients:
4 bone-in, skin-on chicken thighs
1 pound Brussels sprouts, trimmed and halved
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
Fresh rosemary or thyme for garnish (optional)
Instructions:
1. Preheat the oven to 425 degrees Fahrenheit.
2. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
3. Add the chicken thighs to the bowl and coat them thoroughly with the seasoning mixture. Place the chicken skin-side up on a baking sheet lined with parchment paper.
4. In the same bowl, add the halved Brussels sprouts and toss them in the remaining olive oil and seasonings.
5. Arrange the Brussels sprouts around the chicken thighs on the baking sheet.
6. Bake in the preheated oven for about 30 to 35 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the skin is crispy.
7. Remove the baking sheet from the oven and allow the chicken to rest for a few minutes.
8. Serve the baked chicken thighs with the roasted Brussels sprouts, garnishing with fresh herbs if desired.
