Instructions:
1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
2. In a small saucepan, melt the butter over low heat. Add the minced garlic and dried Italian herbs. Cook for 1-2 minutes until the garlic is fragrant but not browned. Remove from heat.
3. Prepare a baking dish by lightly greasing it with a little olive oil or cooking spray.
4. Place the chicken breasts in the baking dish. Season both sides with salt and black pepper.
5. Arrange the zucchini slices around the chicken in the baking dish. Drizzle half of the garlic butter mixture over the chicken and zucchini.
6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius).
7. Once cooked, remove the dish from the oven. Drizzle the remaining garlic butter over the chicken and zucchini.
8. Let it rest for a few minutes before serving. Garnish with chopped fresh parsley.
