Baked Cod with Cauliflower and Broccoli

Ingredients
2 cod fillets (about 6 ounces each)
1 medium head of cauliflower, cut into florets
1 medium head of broccoli, cut into florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon lemon juice
Salt and pepper to taste
1 teaspoon paprika
1 teaspoon dried thyme
Fresh lemon wedges for serving
Fresh parsley for garnish
Instructions
Preheat your oven to 400 degrees Fahrenheit.
In a large mixing bowl, combine the cauliflower and broccoli florets. Drizzle with one tablespoon of olive oil, then add minced garlic, salt, pepper, and paprika. Toss until the vegetables are well-coated.
Spread the seasoned vegetables in an even layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10 minutes.
While the vegetables are baking, prepare the cod fillets. In a small bowl, mix the remaining tablespoon of olive oil, lemon juice, salt, pepper, and dried thyme. Brush this mixture over the cod fillets to coat them evenly.
After the vegetables have baked for 10 minutes, remove the baking sheet from the oven and place the cod fillets on top of the vegetables. Return the baking sheet to the oven and bake for an additional 15 minutes or until the cod is cooked through and flakes easily with a fork.
Once cooked, remove the baking sheet from the oven and let it cool for a couple of minutes. Serve the baked cod over a bed of cauliflower and broccoli, garnished with fresh parsley and lemon wedges on the side.
