Baked Cod with Cauliflower and Broccoli Gratin

Ingredients:
– 4 cod fillets
– 1 cup cauliflower florets
– 1 cup broccoli florets
– 1 cup shredded mozzarella cheese (low-fat if preferred)
– 1/4 cup almond milk (unsweetened)
– 2 tablespoons olive oil
– 2 garlic cloves, minced
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley for garnish

Instructions:

1. Preheat the oven to 375 degrees Fahrenheit.

2. In a medium pot, bring water to a boil and add the cauliflower and broccoli florets. Blanch the vegetables for about 3 to 4 minutes until tender but still crisp. Drain and set aside.

3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

4. Add the blanched cauliflower and broccoli to the skillet. Season with salt, pepper, and dried thyme, mixing well to combine.

5. In a separate bowl, whisk together almond milk and half of the mozzarella cheese. Pour this mixture over the vegetables in the skillet and stir to coat evenly.

6. Place the cod fillets in a lightly greased baking dish. Season with salt, pepper, and any remaining thyme.

7. Spoon the vegetable and cheese mixture over the cod fillets evenly, covering them well.

8. Sprinkle the remaining mozzarella cheese on top of the gratin mixture.

9. Bake in the preheated oven for 20 to 25 minutes or until the cod is cooked through and flakes easily with a fork, and the cheese is melted and bubbly.

10. Remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
