Baked Cod with Spinach and Tomato Salsa

Ingredients
2 fresh cod fillets
1 tablespoon olive oil
Salt and pepper to taste
1 cup fresh spinach, chopped
1 medium tomato, diced
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon fresh basil, chopped

Instructions
Preheat the oven to 400 degrees Fahrenheit.

In a small bowl, combine the diced tomato, minced garlic, lemon juice, and chopped basil. Mix gently and set aside to allow the flavors to meld.

Season the cod fillets with salt and pepper. Place them in a baking dish and drizzle the olive oil over them.

Bake the cod in the preheated oven for about 15 to 20 minutes or until the fish flakes easily with a fork.

Meanwhile, in a skillet over medium heat, warm a small amount of olive oil. Add the chopped spinach and sauté until wilted, about 2 to 3 minutes. Season with a little salt and pepper.

Once the cod is cooked, remove it from the oven and top with the fresh spinach and the tomato salsa mixture.

Serve the baked cod warm, garnished with extra basil if desired. Enjoy your healthy, colorful, and diabetic-friendly dinner.
