2 cod fillets (about 6 ounces each)
2 cups fresh spinach, washed and roughly chopped
1 cup cherry tomatoes, halved
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano

Preheat your oven to 400 degrees Fahrenheit.

In a small bowl, combine the olive oil, minced garlic, oregano, salt, and pepper to create a marinade.

Place the cod fillets in a baking dish. Drizzle half of the marinade over the fish, ensuring an even coating.

In a separate bowl, mix the chopped spinach and cherry tomatoes. Drizzle the remaining marinade over the vegetable mixture and toss to combine.

Arrange the spinach and tomato mixture around the cod fillets in the baking dish.

Bake in the preheated oven for 15 to 20 minutes or until the cod is cooked through and flakes easily with a fork.
