Baked Cod with Zucchini and Garlic Lemon Sauce

Ingredients:
– 2 cod fillets
– 1 medium zucchini, sliced into thin rounds
– 3 cloves of garlic, minced
– 2 tablespoons olive oil
– Juice of 1 lemon
– Zest of 1 lemon
– Salt and pepper to taste
– Fresh parsley for garnish
– Optional: a pinch of red pepper flakes for heat
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit.
2. Prepare a baking dish by lightly greasing it with a tablespoon of olive oil.
3. Place the sliced zucchini in an even layer at the bottom of the baking dish.
4. In a small bowl, mix the minced garlic, lemon juice, lemon zest, remaining olive oil, salt, and pepper together. If you desire some heat, add a pinch of red pepper flakes.
5. Lay the cod fillets on top of the zucchini and pour the garlic lemon sauce over the fish, making sure the fillets are evenly coated.
6. Cover the baking dish with aluminum foil to keep the moisture in and bake for 15 minutes.
7. After 15 minutes, remove the foil and bake for an additional 5 minutes, allowing the cod to develop a light golden crust.
8. Once done, remove from the oven and let it cool for a few minutes.
9. Garnish with freshly chopped parsley before serving.
