2 salmon fillets (approximately 6 ounces each)
1 bunch of asparagus, trimmed
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
Salt and pepper to taste
Lemon wedges for serving

Instructions

Preheat the oven to 400 degrees Fahrenheit.

Line a baking sheet with parchment paper for easy cleanup.

Place the salmon fillets on one side of the baking sheet. Arrange the trimmed asparagus and halved cherry tomatoes on the other side.

Drizzle olive oil over the salmon and vegetables. Sprinkle with garlic powder, dried thyme, salt, and pepper. Toss the asparagus and tomatoes to evenly coat them with the olive oil and seasonings.

Bake in the preheated oven for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet crisp.

Remove from the oven and let it rest for a few minutes before serving.

Serve the baked salmon alongside the asparagus and cherry tomatoes with lemon wedges on the side for added flavor. Enjoy your nutritious and diabetic-friendly dinner.
