1. Preheat the oven to 375 degrees Fahrenheit.
2. In a medium bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well.
3. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Brush the fillets generously with the olive oil mixture.

5. Spread the sautéed spinach around the salmon fillets on the baking sheet.

7. Remove the baking sheet from the oven and let the salmon sit for a minute.
8. Serve the baked salmon on plates with the sautéed spinach, and add lemon wedges on the side if desired.
