Baked Salmon with Spinach and Lemon Garlic Sauce

Ingredients
2 salmon fillets (about 6 ounces each)
2 cups fresh spinach
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon (juice and zest)
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions
Preheat the oven to 400 degrees Fahrenheit.
Line a baking dish with parchment paper or lightly grease it with olive oil.

Place the salmon fillets in the baking dish, skin side down. Season with salt and pepper to taste.

In a small bowl, combine the olive oil, minced garlic, lemon juice, and lemon zest. Mix well to create the sauce.

Pour half of the lemon garlic sauce over the salmon fillets, ensuring they are evenly coated. Reserve the remaining sauce for later.

Bake the salmon in the preheated oven for about 12 to 15 minutes, or until it easily flakes with a fork.

While the salmon is baking, heat a non-stick skillet over medium heat. Add the fresh spinach and sauté for about 2 to 3 minutes, until the spinach is wilted. Season with a pinch of salt and pepper.

Once the salmon is done, remove it from the oven and let it rest for a minute.

To serve, place a portion of sautéed spinach on each plate, top with a salmon fillet, and drizzle with the reserved lemon garlic sauce.

Garnish with freshly chopped parsley if desired. Enjoy your healthy and delicious meal.
