Baked Tilapia with Lemon Garlic Asparagus

Ingredients:
2 tilapia fillets
1 bunch asparagus, trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon, zested and juiced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:

1. Preheat the oven to 400 degrees Fahrenheit.
2. In a large mixing bowl, combine the asparagus, olive oil, minced garlic, lemon zest, and lemon juice. Season with salt and pepper. Toss until the asparagus is evenly coated.
3. Arrange the asparagus in a single layer on one side of a baking sheet. Place the tilapia fillets on the other side of the baking sheet. Drizzle a little olive oil over the fish and sprinkle with salt and pepper.
4. Place the baking sheet in the preheated oven and bake for about 15 to 20 minutes, or until the tilapia flakes easily with a fork and the asparagus is tender.
5. Remove from the oven and garnish with fresh parsley before serving.

Serve immediately and enjoy a healthy, delicious meal that is low in carbs and sugar.
