Baked Tilapia with Spinach and Garlic Butter

Ingredients
2 tilapia fillets
2 cups fresh spinach, washed and trimmed
3 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley or dill, chopped for garnish

Instructions
Preheat the oven to 375 degrees Fahrenheit.

In a large oven-safe skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add the fresh spinach to the skillet and cook until wilted, stirring frequently, approximately 2 to 3 minutes. Season with salt and pepper to taste.

Move the spinach to the sides of the skillet, creating a space in the center. Place the tilapia fillets in the center of the skillet. Drizzle the lemon juice over the fillets and season with salt and pepper.

Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the tilapia is cooked through and flakes easily with a fork.

Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or dill before serving.
