Cauliflower and Broccoli Cheese Casserole

Ingredients
1 large head of cauliflower, cut into florets
1 large head of broccoli, cut into florets
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 cup heavy cream
2 large eggs, lightly beaten
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 tablespoon olive oil or melted butter
1/4 cup grated Parmesan cheese
Instructions
Preheat the oven to 375 degrees Fahrenheit.
In a large pot of boiling salted water, blanch the cauliflower and broccoli florets for about 3 to 5 minutes, until just tender. Drain well and set aside.
In a mixing bowl, combine the heavy cream, eggs, garlic powder, onion powder, salt, and pepper. Whisk the mixture until well combined.
In a large baking dish, toss the blanched cauliflower and broccoli with olive oil or melted butter. Pour the cream mixture over the vegetables, ensuring they are evenly coated.
