Cauliflower and Chicken Stir-Fry with Broccoli

Ingredients:
1 medium head of cauliflower, chopped into florets
2 cups broccoli florets
1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
3 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons low-sodium soy sauce or tamari
1 teaspoon sesame oil
Salt and pepper to taste
2 green onions, chopped
Sesame seeds for garnish

Instructions:

1. Begin by prepping all the ingredients. Wash and chop the cauliflower and broccoli into bite-sized pieces. Cut the chicken breast into small cubes. Mince the garlic and ginger, and chop the green onions.

2. In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the chicken pieces. Season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

3. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

4. Add the cauliflower florets and broccoli to the skillet. Stir-fry the vegetables for about 5-7 minutes, or until they are tender yet crisp.

5. Return the cooked chicken to the skillet. Pour in the low-sodium soy sauce and sesame oil, stirring to combine all the ingredients. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

6. Taste and adjust seasoning if necessary. Once everything is well combined and heated through, remove from heat.

7. Serve the stir-fry hot, garnished with chopped green onions and a sprinkle of sesame seeds for added texture and flavor. Enjoy your healthy, low-carb dinner!
