Ingredients:
1 medium head of cauliflower
1 large egg
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup fresh spinach
1 teaspoon olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
2 large eggs (for topping)
Fresh basil leaves for garnish

Instructions:

1. Preheat your oven to 450 degrees Fahrenheit.
2. Remove the leaves and stem from the cauliflower. Cut the cauliflower into florets and steam until fork-tender, about 5 minutes. Drain the cauliflower and let it cool slightly.
3. In a food processor, pulse the steamed cauliflower until it becomes a fine rice-like texture. Press the cauliflower into a clean kitchen towel and squeeze out as much moisture as possible.
4. In a mixing bowl, combine the cauliflower, large egg, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a round shape, about 1/2 inch thick. Bake in the preheated oven for 15 minutes, or until the edges are golden.
6. While the crust bakes, heat olive oil in a skillet over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
7. After the crust has baked, remove it from the oven and spread the sautéed spinach over the top.
8. Crack the two large eggs on top of the spinach. Optionally, sprinkle with red pepper flakes for added heat.
9. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the egg whites are set and the yolks reach your desired doneness.
10. Once finished, remove from the oven and let cool slightly. Garnish with fresh basil leaves before slicing and serving.
