Ingredients:
For the Cauliflower Crust
1 medium head of cauliflower, riced
1 cup shredded mozzarella cheese, part-skim
1/4 cup grated Parmesan cheese
1 large egg
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste

1 medium zucchini, thinly sliced
1 medium bell pepper, thinly sliced
1 small red onion, thinly sliced
1 cup cherry tomatoes, halved
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 cup shredded mozzarella cheese, for topping
Fresh basil leaves for garnish (optional)

Instructions:

1. Begin by preheating the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.

2. Prepare the cauliflower crust by cutting the cauliflower into florets and placing them in a food processor. Pulse until the florets reach a rice-like consistency. You should have about 3 to 4 cups of riced cauliflower.

3. Transfer the riced cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for a crispy crust.

4. In a mixing bowl, combine the riced cauliflower, shredded mozzarella cheese, grated Parmesan cheese, egg, dried oregano, garlic powder, salt, and pepper. Mix until well combined.

5. Spread the cauliflower mixture onto the prepared baking sheet in a circular shape, about 1/2 inch thick.

6. Bake the crust in the preheated oven for 25 minutes or until golden brown and firm to the touch.

7. While the crust is baking, prepare the grilled veggies. In a bowl, combine the sliced zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and sprinkle with Italian seasoning. Toss to coat the veggies evenly.

8. Heat a grill pan over medium heat. Add the seasoned vegetables and grill them for about 5 to 7 minutes, turning occasionally, until tender and slightly charred.

9. Once the crust is done baking, remove it from the oven and sprinkle the grilled veggies evenly over the top. Add the additional shredded mozzarella cheese on top of the veggies.

10. Return the pizza to the oven and bake for an additional 5 to 7 minutes, until the cheese is melted and bubbly.

11. Remove the pizza from the oven and allow it to cool for a few minutes. If desired, garnish with fresh basil leaves before slicing and serving.
