Instructions:

1. Begin by preheating your oven to 400°F (200°C).

2. Prepare the cauliflower by removing the leaves and stem. Grate the cauliflower using a box grater or food processor until it resembles rice or small grains.

3. In a microwave-safe bowl, place the grated cauliflower and cover it loosely with a paper towel. Microwave on high for about 4-5 minutes until softened. Let it cool for a few minutes and then use a clean kitchen towel to squeeze out any excess moisture.

4. In a large mixing bowl, combine the drained cauliflower, beaten egg, shredded cheese, chopped green onion, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are well incorporated.

5. Heat the olive oil in a non-stick skillet over medium heat.

6. Using a spoon or your hands, form small patties with the cauliflower mixture, about 2-3 inches in diameter, and place them in the skillet. Do not overcrowd the skillet; cook in batches if necessary.

7. Cook each side for about 4-5 minutes until golden brown and crispy. Flip carefully to avoid breaking the patties.

8. Once cooked, transfer the hash browns to a baking sheet lined with parchment paper and place them in the preheated oven for an additional 5-7 minutes to ensure they are cooked through.

9. Remove from the oven and let cool slightly before serving. Enjoy your delicious and healthy cauliflower hash browns as a low-carb breakfast option!

Enjoy your healthy and tasty breakfast!
