Cauliflower Rice Bowl with Chicken and Spinach

Ingredients
1 medium head of cauliflower
1 tablespoon olive oil
2 cups fresh spinach
1 pound boneless, skinless chicken breast, diced
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon lemon juice
Parmesan cheese for topping (optional)
Instructions
1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. Using a food processor, pulse the florets until they resemble rice grains. If you don’t have a food processor, you can use a box grater to grate the cauliflower into rice-sized pieces.
2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the diced chicken breast to the skillet and season with oregano, salt, and pepper. Cook for 5 to 7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
4. Once the chicken is cooked, stir in the cauliflower rice and cook for another 5 minutes, allowing the rice to soften. Season with lemon juice.
5. Finally, add the fresh spinach to the skillet. Stir and cook for an additional 2 to 3 minutes until the spinach is wilted.
6. Divide the cauliflower rice mixture between two bowls. Top with grated Parmesan cheese if desired, and serve warm.
