Chia Seed Pudding with Almond Milk and Berries

Chill Time: 2 hours (or overnight)

Ingredients:
1/4 cup chia seeds
1 cup unsweetened almond milk
1/2 teaspoon vanilla extract
A pinch of salt
1/4 cup fresh berries (such as raspberries, blueberries, or strawberries)
Optional: Stevia or monk fruit sweetener to taste

Instructions:

1. In a mixing bowl, combine the chia seeds, almond milk, vanilla extract, and a pinch of salt. If desired, add a sweetener to taste. Whisk together until well mixed.

2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping of the chia seeds.

3. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight. The chia seeds will expand and create a pudding-like texture.

4. Once the pudding is set, give it a good stir. If the pudding is too thick for your liking, you can add a bit more almond milk to reach your desired consistency.

5. Serve the chia seed pudding in bowls or glasses, topped with fresh berries.
