1 cup low-fat cottage cheese
2 large eggs
1/4 cup almond flour
1/2 teaspoon baking powder

Instructions:
In a mixing bowl, combine the cottage cheese and eggs, mixing well until smooth.
Add the almond flour, baking powder, vanilla extract, and pinch of salt to the bowl, stirring gently until all ingredients are well incorporated.
Heat a non-stick skillet over medium heat and add a small amount of butter or oil to coat the surface.
Pour small portions of the batter onto the skillet, forming pancakes. Cook for about 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
Remove pancakes from the skillet and keep warm while cooking the remaining batter.
