Cucumber and Feta Wraps using Low-Carb Tortilla

Ingredients
2 low-carb tortillas
1 medium cucumber, thinly sliced
1 cup crumbled feta cheese
1/2 cup roasted red peppers, sliced
1/4 cup black olives, sliced
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh dill or parsley for garnish (optional)
Instructions
Begin by laying out the low-carb tortillas on a clean surface.
In a small bowl, combine the olive oil, lemon juice, salt, and pepper. Mix well to create a dressing.
Drizzle the dressing evenly over each tortilla.
Layer the cucumber slices evenly across each tortilla, followed by the crumbled feta cheese.
Add the roasted red peppers and sliced black olives on top of the feta cheese.
You can sprinkle additional salt and pepper if desired.
Carefully roll each tortilla tightly to form wraps.
Slice the wraps in half diagonally for easy serving.
If using, garnish with fresh dill or parsley.
Serve immediately, or wrap in foil for a delicious on-the-go lunch.
