Cucumber and Mint Yogurt Salad
Prep Time: 15 minutes
This refreshing salad is a perfect low-carb option for a diabetic-friendly lunch. It combines the crispness of cucumbers with the coolness of mint and a creamy yogurt dressing.
Ingredients
2 medium cucumbers, diced
1 cup plain Greek yogurt (unsweetened)
1/4 cup fresh mint leaves, chopped
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Begin by dicing the cucumbers into small, bite-sized pieces and place them in a large mixing bowl.
In a separate bowl, combine the plain Greek yogurt, lemon juice, and olive oil. Whisk together until smooth and creamy.
Add the chopped mint leaves to the yogurt mixture, stirring gently to incorporate the mint throughout the dressing.
Pour the yogurt dressing over the diced cucumbers and mix well to ensure all the cucumber pieces are evenly coated.
Season the salad with salt and pepper to taste, adjusting as necessary.
Chill the salad in the refrigerator for about 10 minutes to allow the flavors to meld before serving.
Serve chilled as a light lunch or side dish, garnished with additional mint leaves if desired.
