2 large cucumbers, peeled and diced
1 cup plain Greek yogurt, full-fat or low-fat
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
1 small garlic clove, minced
Salt to taste
Black pepper to taste
Cherry tomatoes for garnish (optional)

Instructions

In a large mixing bowl, combine the diced cucumbers and salt. Let them sit for about 5 minutes to draw out excess moisture.

While the cucumbers are resting, in a separate bowl, mix the Greek yogurt, lemon juice, dill, minced garlic, and black pepper to create the dressing.

After 5 minutes, drain any excess liquid from the cucumbers. Gently fold the cucumber into the yogurt dressing until well combined.

Taste and adjust seasoning if necessary. You can add more salt, pepper, or lemon juice according to your preference.

Transfer the salad to a serving bowl. If desired, garnish with halved cherry tomatoes for a pop of color and freshness.

Serve immediately for the best flavor and texture, or refrigerate for up to an hour before serving if you prefer a chilled salad. Enjoy this refreshing and low-carb dish.
