1 large eggplant, diced

1 pound turkey sausage, sliced
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced (red or green)
2 cups vegetable or chicken broth (low sodium)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 tablespoons olive oil

Instructions
Begin by heating olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3 minutes until it becomes translucent.

Next, add the minced garlic and diced bell pepper to the pot, stirring for an additional 2 minutes until fragrant.

Incorporate the sliced turkey sausage into the pot and cook for 5 to 7 minutes, stirring occasionally, until the sausage is browned.

Add the diced eggplant to the pot, stirring well to combine. Cook for about 5 minutes until the eggplant begins to soften.
