Grilled Asparagus with Poached Eggs and Hollandaise

Ingredients:
1 bunch asparagus, trimmed
2 large eggs
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon lemon juice
2 tablespoons unsalted butter
1 egg yolk

Instructions:

1. Preheat a grill pan or outdoor grill over medium-high heat.
2. Toss the asparagus with olive oil, salt, and pepper. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from the heat and set aside.
3. In a small saucepan, bring water to a gentle simmer. Crack the eggs into separate small bowls or ramekins. Slowly slide each egg into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny.
4. In a separate small saucepan over low heat, melt the butter. In a bowl, whisk the egg yolk and lemon juice together until creamy, then gradually stir in the melted butter. Season with salt and pepper to taste.
5. To serve, place the grilled asparagus on a plate. Gently remove the poached eggs from the water with a slotted spoon and place them on top of the asparagus. Drizzle the hollandaise sauce over the eggs and asparagus.
