Grilled Chicken with Cauliflower and Zucchini

Ingredients
2 boneless, skinless chicken breasts
1 medium head of cauliflower, cut into florets
1 medium zucchini, sliced into rounds
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Preheat the grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
2. In a large bowl, combine the chicken breasts with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper. Mix well to ensure the chicken is evenly coated.
3. Next, in another bowl, toss the cauliflower florets and zucchini slices with the remaining tablespoon of olive oil, salt, and pepper. Make sure the vegetables are well coated.
4. Place the chicken breasts on the preheated grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.
5. While the chicken is grilling, spread the cauliflower and zucchini on a grill basket or place them directly on the grill. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
6. Once cooked, remove the chicken and vegetables from the grill. Squeeze fresh lemon juice over the chicken and garnish with chopped parsley.
7. Serve the grilled chicken alongside the cauliflower and zucchini. Enjoy this delicious, low-carb, diabetic-friendly dinner.
