Grilled Chicken with Cauliflower Mash and Green Beans

Ingredients
For the grilled chicken
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
For the cauliflower mash
1 medium head of cauliflower, cut into florets
2 tablespoons unsalted butter
1 tablespoon cream cheese
Salt and pepper to taste
Fresh chives, chopped (optional for garnish)
For the green beans
8 ounces fresh green beans, trimmed
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
1. Begin by marinating the chicken. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts in the marinade and set aside while preparing the rest of the meal.
2. Fill a large pot with water and bring it to a boil. Add the cauliflower florets and cook for about 10 minutes, or until fork-tender. Drain the cauliflower and transfer it to a large mixing bowl.
3. While the cauliflower cooks, preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts and grill for about 6 to 7 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.
4. To the mixing bowl with the cauliflower, add unsalted butter, cream cheese, salt, and pepper. Use an immersion blender or a fork to mash the cauliflower until smooth and creamy. Adjust seasoning as desired.
5. In a separate pan, heat olive oil over medium heat. Add the trimmed green beans and sauté for about 5 to 7 minutes until tender-crisp. Drizzle with lemon juice and season with salt and pepper.
6. To serve, plate a portion of the cauliflower mash alongside the grilled chicken. Add a serving of green beans and garnish the mash with freshly chopped chives if desired.
