Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon paprika
4 cups fresh spinach leaves
1 ripe avocado, diced
1/4 cup cherry tomatoes, halved
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1/4 cup crumbled feta cheese (optional)
Fresh herbs for garnish (such as parsley or cilantro)

Instructions
1. Preheat the grill or grill pan over medium heat.
2. While the grill is heating, pound the chicken breasts to an even thickness to ensure they cook evenly.
3. In a small bowl, mix olive oil, salt, pepper, garlic powder, and paprika. Brush this marinade over both sides of the chicken breasts.
4. Once the grill is ready, place the chicken breasts on it. Grill for about 5 minutes on one side, then flip and grill for another 5 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
5. While the chicken is grilling, prepare the salad. In a large mixing bowl, combine the fresh spinach, diced avocado, and halved cherry tomatoes.
6. In a small bowl, whisk together the lemon juice and balsamic vinegar. Drizzle this dressing over the salad and toss gently to combine.
7. If using, sprinkle crumbled feta cheese over the salad mixture.
8. Once the chicken is done, remove it from the grill and let it rest for 5 minutes before slicing it.
9. Serve the sliced grilled chicken on a bed of spinach and avocado salad. Garnish with fresh herbs if desired.
