Grilled Chicken with Zucchini and Asparagus

Ingredients
2 boneless, skinless chicken breasts
2 medium zucchinis, sliced into rounds
1 cup asparagus, trimmed
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh lemon wedges for serving
Instructions
Begin by preheating your grill or grill pan over medium-high heat. While the grill is heating, prepare the chicken. In a small bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub this mixture evenly over the chicken breasts.
Next, in a separate bowl, toss the sliced zucchini and trimmed asparagus with a bit of olive oil, salt, and pepper.
Once the grill is ready, place the chicken breasts on it. Grill the chicken for about 6 to 7 minutes on one side, then flip and cook for an additional 6 to 7 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
While the chicken is grilling, add the zucchini and asparagus to the grill. Cook the vegetables for about 4 to 5 minutes on each side until they are tender and have grill marks.
Once everything is done, remove the chicken and vegetables from the grill. Allow the chicken to rest for a couple of minutes before slicing. Serve the grilled chicken alongside the zucchini and asparagus. Optionally, squeeze fresh lemon juice over the dish for added flavor.
