Grilled Eggplant with Feta and Basil

Ingredients
1 large eggplant
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
4 ounces feta cheese, crumbled
1 cup fresh basil leaves, chopped
Juice of 1 lemon
Instructions
Begin by preparing the eggplant. Cut it into ½ inch thick slices and place the slices on a clean kitchen towel. Sprinkle a little salt on each slice and let them sit for about 10 minutes to draw out excess moisture and bitterness. After 10 minutes, pat the slices dry with paper towels.
Preheat your grill or grill pan over medium-high heat. In a small bowl, mix the olive oil and garlic powder. Brush both sides of the eggplant slices with the olive oil mixture and season with salt and pepper.
Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, until they are tender and have nice grill marks. Remove the eggplant from the grill and let it rest for a minute.
While the eggplant is resting, prepare the topping. In a bowl, combine the crumbled feta cheese, chopped basil, and lemon juice. Mix gently to combine all the flavors.
To serve, arrange the grilled eggplant on a platter and spoon the feta and basil mixture over the top. Garnish with additional basil leaves if desired.
