Total time: 25 minutes
Servings: 2
Ingredients
2 halibut fillets (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 ripe avocado, diced
1 small tomato, diced
1 small red onion, finely chopped
1 lime, juiced
2 tablespoons fresh cilantro, chopped
Instructions
1. Preheat the grill to medium-high heat.
2. In a small bowl, combine olive oil, garlic powder, salt, and pepper. Brush the mixture over the halibut fillets to coat both sides evenly.
3. Place the halibut fillets on the grill and cook for about 4 to 5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
4. While the fish is grilling, prepare the avocado salsa. In a mixing bowl, combine the diced avocado, tomato, red onion, lime juice, and cilantro. Gently fold the ingredients together until well combined.
5. Once the halibut is grilled, remove it from the heat and let it rest for a couple of minutes.
6. Serve the halibut on plates topped with a generous spoonful of avocado salsa. Enjoy your delicious and nutritious meal.
