– Fresh basil leaves for garnish
Instructions:
1. Preheat a grill pan over medium heat.
2. While the pan heats up, toss the cherry tomatoes and olives in a bowl with olive oil, oregano, and black pepper.
3. Place the sliced halloumi on the hot grill pan, cooking for about 2 to 3 minutes on each side or until golden brown and crispy.
4. In the last minute of grilling the halloumi, add the tomato and olive mixture to the pan to warm them slightly.
5. Once the halloumi is grilled and the tomatoes are heated, remove everything from the pan and arrange it on a serving plate.
6. Garnish with fresh basil leaves before serving.
