Grilled Lamb Chops with Garlic Green Beans

Ingredients
4 lamb chops, preferably loin or rib
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and black pepper, to taste
8 ounces fresh green beans, trimmed
1 tablespoon lemon juice
1 tablespoon grated Parmesan cheese (optional)
Instructions
1. Preheat the grill to medium-high heat.
2. In a small bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper. Mix well to create a marinade.
3. Rub the marinade evenly over both sides of the lamb chops. Allow the lamb to marinate for about 10 minutes while you prepare the green beans.
4. Bring a small pot of water to a boil. Add the fresh green beans and blanch for 3 minutes to brighten their color and soften slightly. Drain the beans and immediately immerse them in ice water to stop the cooking process.
5. In a skillet over medium heat, add a teaspoon of olive oil and sauté the blanched green beans for about 3-4 minutes, stirring frequently.
6. Add the lemon juice, minced garlic, and a pinch of salt and pepper to the green beans. Sauté for an additional 1-2 minutes until fragrant, then remove from heat. If desired, sprinkle with grated Parmesan cheese.
7. While the green beans are cooking, grill the marinated lamb chops for 4-5 minutes on each side or until they reach desired doneness (medium-rare is ideal at an internal temperature of about 145°F).
8. Remove the lamb chops from the grill and let them rest for a few minutes before serving.
9. Plate the grilled lamb chops alongside the garlic green beans. Serve immediately and enjoy your healthy, diabetic-friendly dinner.
