Ingredients:
4 lamb chops
1 medium zucchini, sliced into thin rounds

1 cup Greek yogurt (unsweetened and full-fat)
1 tablespoon fresh mint, finely chopped
1 tablespoon lemon juice
Instructions:
1. Preheat the grill or grill pan over medium-high heat. Lightly brush the grill with olive oil to prevent sticking.
2. In a small bowl, combine the Greek yogurt, fresh mint, and lemon juice. Mix well and set aside in the refrigerator to allow the flavors to meld.
3. In a separate bowl, combine the olive oil, garlic powder, dried oregano, salt, and pepper. Rub this mixture over both sides of the lamb chops.
4. Once the grill is hot, add the lamb chops. Grill them for about 4 to 5 minutes on each side for medium-rare doneness, or adjust the time based on your desired doneness.

7. On each plate, place a portion of grilled zucchini and top it with two grilled lamb chops. Serve with a generous dollop of mint yogurt on the side.
