Grilled Lamb with Zucchini and Mint Yogurt

Ingredients:
2 lamb loin chops
1 medium zucchini, sliced into rounds
1 tablespoon olive oil
Salt and pepper, to taste
1/2 cup Greek yogurt, plain and unsweetened
1/4 cup fresh mint leaves, chopped
1 teaspoon lemon juice
Instructions:
Begin by preheating your grill or grill pan over medium-high heat.
While the grill is heating, prepare the lamb loin chops. Pat them dry with a paper towel, then rub with olive oil and season generously with salt and pepper.
Next, slice the zucchini into rounds. Drizzle with a little olive oil and season with salt and pepper. Set aside.
For the mint yogurt sauce, combine Greek yogurt, chopped mint leaves, and lemon juice in a small bowl. Mix well and set aside to allow the flavors to meld.
Once the grill is hot, place the lamb chops on it. Grill for about 4-5 minutes on each side, or until they reach the desired level of doneness. Adjust time based on your preference for medium-rare to medium.
At the same time, add the sliced zucchini to the grill. Grill for about 3-4 minutes per side until tender and slightly charred.
Once done, remove the lamb chops and zucchini from the grill and let them rest for a couple of minutes.
To serve, place the grilled lamb chops on a plate alongside the zucchini slices. Drizzle or dollop the mint yogurt on top or serve it on the side for dipping.
