Total time: 25 minutes
Serves: 2
Ingredients
2 salmon fillets
1 tablespoon olive oil
Salt and pepper to taste
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1 small red onion, finely chopped
1 tablespoon fresh lime juice
1 teaspoon fresh cilantro, chopped
Instructions
1. Preheat a grill or grill pan over medium-high heat.
2. In a small bowl, mix the olive oil with salt and pepper. Brush this mixture over both sides of the salmon fillets.
3. Place the salmon fillets on the grill and cook for about 5 minutes on each side, or until they are cooked through and have nice grill marks. Cooking time may vary depending on the thickness of the fillets.
4. While the salmon is grilling, prepare the avocado and tomato salsa. In a mixing bowl, combine the diced avocado, halved cherry tomatoes, chopped red onion, lime juice, and cilantro. Gently toss to combine, being careful not to mash the avocado.
5. Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes.
6. Serve the grilled salmon topped with the avocado and tomato salsa.
