Grilled Salmon with Cucumber Salad

Ingredients
2 salmon fillets (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
1 medium cucumber, thinly sliced
1 cup cherry tomatoes, halved
1 tablespoon red onion, finely chopped
1 tablespoon fresh dill, chopped
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Instructions
1. Preheat the grill to medium-high heat.
2. In a small bowl, mix the olive oil, lemon juice, salt, and pepper. Brush this mixture over the salmon fillets.
3. Place the salmon fillets on the grill and cook for about 5 minutes on each side or until the fish flakes easily with a fork.
4. While the salmon is grilling, prepare the cucumber salad. In a large bowl, combine the cucumber slices, cherry tomatoes, red onion, and fresh dill.

6. Once the salmon is done, remove it from the grill and let it rest for a couple of minutes.
