Instructions:

1. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Mix well to create a marinade.

2. Add the peeled and deveined shrimp to the bowl and toss to coat them evenly in the marinade. Allow the shrimp to marinate for about 10 minutes.

3. Preheat a grill or grill pan over medium-high heat.

4. Grill the marinated shrimp for about 2-3 minutes on each side, or until they turn pink, opaque, and are cooked through. Remove from heat and set aside.

5. In a large bowl, combine the mixed greens, cucumber, and bell pepper. Toss gently to mix.

6. Add the diced avocado to the salad and top with the grilled shrimp.

7. Drizzle with any remaining marinade if desired and season with additional salt and pepper to taste.

8. Garnish with fresh herbs before serving.

9. Serve immediately and enjoy this refreshing and nutritious lunch option.

This dish is packed with protein from the shrimp, healthy fats from the avocado, and plenty of vitamins from the fresh vegetables, making it a perfect low-carb, sugar-friendly meal for those looking to manage their blood sugar levels.
