Ingredients
12 large raw shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 medium avocado, diced
1 small cucumber, diced
1 tablespoon fresh lemon juice
1 tablespoon fresh cilantro, chopped
Optional: chili flakes for a bit of heat

Instructions
1. Preheat the grill or grill pan over medium-high heat.
2. In a bowl, toss the shrimp with olive oil, garlic powder, salt, and pepper until evenly coated.
3. Place the shrimp on the grill and cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from the grill and set aside.
4. In a separate bowl, combine the diced avocado, cucumber, lemon juice, and chopped cilantro. Gently mix to combine, being careful not to mash the avocado.
5. Season the salad mixture with salt and pepper to taste. If desired, add chili flakes for some heat.
6. Serve the grilled shrimp over the avocado and cucumber salad, garnishing with additional cilantro if desired.
