Ingredients:
12 large uncooked shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
2 cups cauliflower rice (fresh or frozen)
1 tablespoon butter or olive oil for cauliflower rice
1 cup spinach, chopped
Juice of half a lemon
Fresh parsley for garnish

Instructions:
1. Preheat the grill or grill pan over medium-high heat.
2. In a mixing bowl, combine shrimp, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until shrimp are evenly coated in the seasoning.
3. Once the grill is hot, add the shrimp and grill for about 2-3 minutes on each side until they are pink and opaque. Remove from the grill and set aside.
4. In a skillet over medium heat, melt the butter or olive oil. Add the cauliflower rice and sauté for about 5 minutes, stirring occasionally.
5. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with additional salt and pepper if desired.
6. Serve the grilled shrimp on a bed of cauliflower rice. Drizzle with fresh lemon juice and garnish with parsley.
